THB : Banana, Macadamia Nut, and Coconut Coffee Cake

Our 11th bake at The Home Bakers! Banana, Macadamia Nut, and Coconut Coffee Cakes is chosen for  this week's bake by the lovely Kit from I-Lost In Austen.  Drop by Kit's wonderful site to view all her delicious bakes and gorgeous flowers from her garden! I drool each time I dropped by! You would too! :)

This is a lovely delicious cake! I used walnuts simply because I have walnuts in my pantry and also because macadamia costs a bundle over here, so I never stocked up on macadamia nuts! I made half a recipe using two medium ripe bananas and substitute the sour cream for yoghurt. And aslo for half a recipe, I reduced the sugar slightly to 1/4 cup, and it turns out just nice.  The bananas are blended to a puree along with the eggs, oil, rum, yoghurt and vanilla extract, which gives a runny consistency. The mixture is then added to the dry ingredients, mix to combine and spread evenly in the baking pan. This method is exactly that of making muffins. The top is then sprinkled with the nuts and the mixture of cinnamon-sugar. Bake till done.

I love the most is the chewy coconut flakes, so fragrant and delightful. This cake has a very moist and so very soft texture, almost spongy! Of course the taste and smell of the bananas are wonderful and I like the nutty "cinnamony" topping.

See the bits of the flaked coconuts, makes a delicious chewy texture to the soft and moist cake.

Overall review : Delicious cake! Thumbs up from the family.

Please visit Kit from I-Lost-In-Austen for the full recipe. To view the others members bake on this cake, do drop by The Home Bakers (THB).

  19. Hi Joyce,

I was caught in between the "to-bake" or "not-to-bake" situation with this recipe. This recipe seems very easy to bake but the cake has coconut in it. Sorry that I've decide not to bake this one as I'm too "lazy" to alter the recipe.

  22. Hi Joyce,
I was actually thinking of using walnuts too as my husband is allergic to Macadamia nuts but I could be really mean and make it with macadamia nuts so I have the whole cake to myself as I LOVE macadamia hahahha ;)
I can't wait to bake this.

  23. Hi Joyce,

your cake looks so moist. And yes, walnuts are definitely a good choice next to macadamia nuts and in our region, walnuts are a lot cheaper too. Nevertheless, I like the way you make it as a cake instead of cupcakes or muffins like how many of us did. I will do it your way next time :)

  24. Hi Joyce, just posted my post a few hours before the deadline ;). Macadamias are really expensive here too, but I adore those fat-full balls of bliss so didn't need a lot of convincing to and get me some (I ate most of them on their own though) Great looking cake :)
