"Fill The Tins", is the theme for this week at I Heart Cooking Clubs (IHCC), where we are currently cooking from Donna Hay's recipes. Cookies and treats, are just perfect for the coming festive Christmas. There are quite a number of cookies that I wanted to try from Donna Hay's recipes, and decided to try this Rum And Raisin Cookies.
Ingredients used are raisins, rum, chocolate chunk (I used choc chips), oats, cocoa powder, butter, flour and brown sugar. I like it that these cookies are not too sweet. Recipe states that it will yield about 15 cookies, but I've got doubled that amount, to be exact, 33 cookies, and the sizes are in the range of 2-1/2" to 3" cookies.
While these are baking, it smells wonderful with the aroma from the rum.
These cookies are chewy with cake-like texture. In general, my family prefers crispy cookies, but these were all gone in three days. My son like eating these cookies with a glass of hot milk, to dunk in!
Rum and Raisin Cookies are perfect for coming the festive season.
Rum and Raisin Cookies

1/4 cup (60 ml) dark rum
2 cups (300gm raisins)
125gm butter, softened and chopped
1 cup (175gm) brown sugar
1/2 teaspoon vanilla extract
1/4 cup (25gm) cocoa powder
2-1/2 cups (375gm) plain (all-purpose) flour
1 teaspoon baking powder
1 egg
1/4 cup (60ml) milk
1/2 cup (90gm) rolled oats
1/2 cup (50gm) dark chocolate chunks
Preheat oven to 180C (390F). Place the rum and raisins in a small saucepan over low heat and simmer until the raisins have absorbed the rum. Process butter, sugar, vanilla, cocoa, flour, baking powder, egg and milk in a food processor until a soft dough forms. Place in a bowl and stir through the oats, chocolate and raisins. Using your hands, mould 2 tablespoons of cookie mixture into a flat round. Place on a baking tray lined with non-stick baking paper, leaving room to spread. Repeat with remaining mixture. Bake for 15-18 minutes or until the base is dark and crisp. Allow to cool on tray. Makes 15
* To check if the cookies are done, look at the bottom, not the top. If you wait until the top looks right you risk overcooking them. To check, lift a cookie with a spatula so you can see underneath. The bottom should be deep golden. Cool on trays as the cookies will continue to cook after you've removed them from the oven.

ReplyDeleteHi Joyce, looking at your cookies in Dec always remind me of Christmas. I bought 2 x'mas issue of Donna Hay Magazine in the past & I always adore how pretty-looking those recipes are. This year she has some snowy gingerbread houses on her front cover, so pretty.

ReplyDeleteHi Joyce, nice cookies but if it is chewy, I can't bake them for CNY. Most people expect cookies to be crispy, if chewy they may think they aren't fresh.... A friend told me, my cookies turned moldy and she wanted to throw them away. She didn't know the whitish thing is icing sugar, hehehe!

I like to add raisins, nuts into chocolate cookies., bread and cake. but most of time, I just ommit them as my daughters don't like nuts and raisins ;( . So good your son love them, I bet these are good!

ReplyDeleteWhat a fun recipes for cookies. I don't think I've ever had a cookie with rum in it before, but I can see how the flavor of the run would work well with the raisins and the chocolate. So glad they were a hit with your family!

ReplyDeleteIt's funny because I was going to choose these for this theme...the book I am cooking from doesn't have any cookie recipes so I thought I would just grab one online at her site and this was the one that caught my eye. Still going to make this for the Christmas Eve cookie trays here...your pictures are wonderful.
