"Let's Do Brunch!", our theme for this week at I Heart Cooking Clubs (IHCC), where we are currently cooking from our featured chef, Nigel Slater's recipes.
I have some leftover rice and wanted to use it all up, so I searched for Nigel Slater's rice recipes. Found this recipe, which he named as Fried Rice, Spanish Style. He has used Spanish chorizo, and I have unfortunately used up all my chorizo, and what I had was some regular sausages, so that was what I've used. I have a few stalks of celery, spring onions from the garden and I'm good to go!
This is really a recipe that do not need any exact measurement. Nigel has entered this recipe on Dec 3rd, and he has pretty much summarized everything in a paragraph, refer the "recipe" below. Firstly the chopped spring onions and chopped garlic are sauteed in a little olive oil, then the celery and sausages are added in, stir for a few minutes until fragrant. Add in the rice and stir to combine. I have added some salt and black pepper to taste, though I supposed that if you are using chorizo sausages, you would probably need less salt or not at all. Overall, this simple fried rice is very tasty. A perfect meal to serve for one or two. Quick, simple and easy, perfect for brunch!
To round it off for a filling meal, I served it with a fried egg, topped with dashes of hot sauce. Simple and yummy! I made this for myself actually, but it ended up shared by my son and daughter!
Fried Rice, Spanish Style
(adapted from "The Kitchen Diaries", Nigel Slater)
"There is some cooked rice in a cracked earthenware dish in the fridge. It will make a supper for two, just. I fry off some chopped spring onions and a chopped clove of garlic in a shallow pan with a glug of olive oil, then chuck in some chopped celery, several slices of brick-red Spanish chorizo and a couple of pieces of black pudding too. When all is sizzling and the smell of warm sausage comes up from the pan, I stir in the rice, gently teasing the grains apart. We eat the result, which whilst being utterly delicious looks a bit of a mess, with bottles of cold beer."
I am going to make a rice stir-fry tomorrow too. This looks very comforting and tasty.

ReplyDeleteNow this is a lovely way to use leftover rice! I like the ease of the recipe too. Seems very easy for busy mornings. Love that you topped it all off with an egg. I say this all the time, but there's something about an egg that is so very welcoming. Makes you want to tuck right into the dish!
ReplyDeleteThis looks delicious, Joyce - perfect for a leisurely brunch. I have some homemade Merguez sausages on hand (my first attempt at sausage making) which would be fabulous in this, and I'm loving the fried egg on top. Like, Kim, I just want to dig straight into this :-)

There is always left over rice in the fridge and we do like a good fried rice. Nece touch with the egg on top.
