THB : Peach-Cashew Coffee Cake

This week's bake at The Home Bakers (THB), is Peach-Cashew Coffee Cake, selected by Chaya of Bizzy Bakes.


The base is a butter cake topped with sliced peaches and toasted cashew nuts before baking. I have used canned peaches and did not toss them with lemon juice and nutmeg powder as stated in the recipe. And I have reduced the sugar to half. Cashew nut is an interesting ingredient which I seldom find in baking recipes. 


This cake can be baked in a tart pan or a springform pan, and I have used a 9-1/2 inch springform pan. Bake for 30 minutes until golden brown and cooked.


A very nice cake, the texture of the cake is soft and tender, buttery and very moist, with the sliced peaches and the cashew nuts, makes this a perfect coffee cake.

  2. So funny, Joyce : yesterday I was thinking I should make a peach cake :)
    This one looks perfect. This is a very good idea to use canned peach. They are good and it prevents to "waste" fresh preaches if our cake is, finally, not too good :)

  4. cashew still taste crunchy? i used it to bake cake before and it turns out very soggy.

    1. Hi Thea,
      The cashew nuts are first toasted and then used in the recipe. It is not really crispy but definitely not soggy. You can replace with almonds or pistachios.

  9. I have a can of peach which sitting in pantry for long time. This coffee cake looks great! Maybe use my peach in this bake.

  15. Neither have I try any baks with cashew nuts. I just bought some cashew nuts may be I shall try this out. Looks good.

  18. i am also not used to cashew nuts in cakes..but i hv lots if almond flakes in the house..maybe i will use that.
